Healthy Banana Oat Waffles (Gluten Free)
Here’s my foolproof, super easy and healthy gluten free banana oat waffle recipe. These waffles are a real hit with my whole family - crispy on the outside, soft and fluffy on the inside. My partner eats them as they are gluten free, I can eat them as they are dairy free and the kids just love waffles. For the past few months, they have made a regular appearance in our kitchen. Other than the bananas, I readily have all the ingredients in the pantry. So they can be whipped up quickly. Lately, I have been making them as a morning tea snack for the kids whilst they have been at home during lockdown.
Ingredients (makes 4 waffles)
2 cups of rolled oats
1 cup of oat milk or another non-dairy milk alternative
1 1/2 tsp vanilla extract
2 eggs (55g each)
1 ripe banana (medium size)
1 tsp ground cinnamon
1 tsp baking powder
12-15 drops of stevia liquid concentrate (depending how sweet you like your waffles)
Instructions
Preheat waffle maker and spray with cooking oil
Place all ingredients into a blender and blend until smooth
Pour 1/4 to 1/3 of the batter onto the waffle maker. Follow the waffle maker instruction. For me, I cooked the waffles near the highest setting at the waffle maker for approximately 6-8 minutes. They come out golden brown and crispy.
Serve the waffles immediately.
These gluten free banana oat waffles, can be easily stored in the fridge for up to 3 days or in the freezer for up to 2 months. For storage in the fridge and freezer, I store the waffles in an airtight container. To reheat, I use the toaster on its lowest setting. The waffles will come out golden brown and crunchy. As I use enough stevia liquid concentrate in the recipe, my kids don’t eat them with maple syrup. If I was planning on serving them with berries or maple syrup, I would definitely reduce the amount of stevia liquid concentrate used in the recipe.
