A Plant-Based Mum: Lockdown Eased (Ever so Slightly)

With spring firmly in the air, last week Victorian primary school students returned to school for onsite learning. Like many Victorian families, my partner and I were super excited that our children were again reconnecting with their friends and teachers. Last Monday morning, I happily waved them off as they rushed out the door to school. When I picked them up in the afternoon, two happy faces greeted me as they disembarked the school bus. As we walked home from the bus stop, there was a continuous chatter from both kids with entertaining stories from school. Happy kids, happy family!

Along with the return to onsite learning, came the challenge of what to pack in my children’s lunchboxes. Since our move to a whole food plant-based diet, some of my go to lunchbox menu options had to be excluded: store bought muesli bars (too much added sugar), potato chips, meat sausage rolls, ham sandwiches, pizza and meat dumplings. Our school is also a nut free zone! Last weekend, I spent my time scouring through my old recipe books and Pinterest for some plant-based inspiration. Luckily, I managed to find some nut free healthy, kid friendly plant-based options that can be served either cold and hot.
